Nowadays we hear of super antioxidants, artificially manufactured pills with ORAC values in the thousands. “A dietary antioxidant is a substance in foods that significantly decreases the adverse effects of reactive species, such as reactive oxygen and nitrogen species, on normal physiological function in humans” . Primary antioxidants delay or inhibit the initiation step of oxidation, while the secondary antioxidants slow down the oxidation by removing the substrate or by quenching free oxygen radicals. Although the definition was initially applied to the oxidation of lipids, it is now extended to the oxidation of
proteins, DNA, and carbohydrates and includes all the repair systems which do not necessarily involve antioxidant activity.
